Cutting Tool chef's knife, mandolin, or food processor to slice the onions thinly1

- 2 lbs peeled onions A 5 lb. bag of onions peeled will equal 3 Ibs
- 4 oz butter
- 1.5 tsp black pepper freshly ground
- 2 tbsp paprika
- 1 bay leaf
- 3 qts beef broth Swanson's brand preferred
- 1 cup dry white wine optional
- .75 cup all-purpose flour
- 2 tsp salt
- french bread
- swiss cheese
Get Recipe Ingredients
Slice onions 1/8" thick
Melt butter, place onions in it, saute slowly for 1½ hours in a large soup pot
Add all other ingredients except bouillon, saute over low heat 10minutes more Add bouillon and simmer for 2 hours
Adjust color to a rich brown with caramel coloring or kitchen bouquet
Season with salt to taste
Put in icebox overnight
Proper Serving
Heat soup. Fill fireproof casserole or individual fireproof bowls with 80z. of soup, top with three 1½" slices of Famous-Barr French bread and top with 1½ oz. imported Swiss cheese, place under broiler until brown, approx. S minutes 550°.
This recipe yields 2 qts. finished soup.
